In America, over the past five years, there has been an explosive interest in the culinary arts. People want to experiment and cook innovative and exciting dishes. They want to bake artisan breads and brick-oven pizzas. Food is culture. Food is also location, heritage, geographical origin, and above all, language. Foodies have there own clannish vernacular and lingo. Cooking and baking is like being accepted into a secret society; you need to know the password to be able to get in.

What, then, is patiss? It is the abbreviation for a patisserie.Get more information here. http://cruiseblogjohnpond.com/2011/07/26/masterchef-featured-patisse/ A patisserie is the cornerstone of French baking; long, crusty baguettes, jam or chocolate filled crepes, and delightfully sculptured sweets of all shapes, forms, and sizes line the glass display cases of these beloved institutions. They are everywhere in France, and are perfect places for that afternoon sweet and cappuccino. The abbreviation patiss is not to be mistaken or confused with pastis. What is pastis? It is another beloved French institution. Pastis is an anise-flavored liqueur that is much-admired by the French. It is an aperitif. So whether you are heading to the patiss for a baguette, or having a pastis after dinner, be sure to say merci.

Making your own wedding cake at home can be fun and far less expensive than hiring someone to do it for you. There are so many different ways that you can make your wedding cake. You could have a simple one layer cake or have one that has several layers.

To make your own wedding cake at home you will need to have a pan for each layer of cake. The pans should be of different sizes, you could even do different shapes. You could have a large square base and a couple layers of two different size circles. You will also need some icing bags with decorative tips to add all the finishing touches. If you plan to use a fruit type cake and fondant for icing you can make your cake weeks or even months in advance. If you plan to use a sponge cake and buttercream frosting, the earliest it can be made is the day before the wedding.

The cake does not have to be complicated to be a great wedding cake. You could simply use boxed cake mixes and icing. Make it the day before the wedding and store it in the fridge.

So your loved one has a birthday coming up and you want to bake and decorate a cake for them. But you’re not sure where to begin. Well, you’ve come to the right place! I will share some tips for you that will help your cake to be above the rest.

Crumb Coat
A crumb coat before the final icing is applied will help to keep crumbs out of the main icing. It is created by dabbing icing along the sides and top of the cake, then refrigerating the cake for at least 20 minutes to set the icing. Then you can apply the final icing layer without worrying about the crumbs from the cake getting mixed in.

Smoothing the Icing
After icing the whole cake, take your spatula and rinse it with warm water. Dry it off well, and then run it along the surface of the cake. This will create a smooth, silky icing surface on which to decorate.

Fondant
Fondant is a sugar-water mixture that has the consistency of soft clay. It can be used as a base covering for the cake, or it can be sculpted or molded into decorations.

Interior Decoration
Add sprinkles, red-hots, marshmallows, chocolate chips, or candy bar chips to your batter to create a colorful interior to your cakes.
